If you like quinoa, you'll like this salad. If you've never had quinoa, you should try this salad. It is so yummy. It's from Feeding the Whole Family, a cookbook that I'm liking very much and really should return to the library... (the kale & white bean soup was also from there).
I doubled what the recipe called for and substituted liquid aminos for the tamari. Also used roasted & salted sunflower seeds and omitted the salt. Served it warm, but it's just as good cold the next day. I'll include the original recipe below:
Quinoa Salad with Lemon & Garlic
1 cup dry quinoa
1/2 tsp salt (omitted this)
1 3/4 cup water
1/2 cup chopped carrots
1/3 cup minced parsley
1/4 cup sunflower seeds (used roasted & salted seeds)
3-4 cloves garlic, minced
1/4 cup freshly squeezed lemon juice
1/4 cup evoo
1-2 Tbsp tamari or shoyu (I used liquid aminos)
Rinse quinoa & drain. Put drained quinoa and water in a large saucepan & bring to boil. Reduce heat, cover & let simmer 15-20 min or until water is absorbed. Remove from heat. Let stand about 5-10 min covered. Fluff with fork.
Meanwhile combine garlic, lemon juice, olive oil & tamari in container. Put quinoa into large bowl. Add carrots, parsley, seeds and dressing. Combine together well. Serve warm, at room temp or cold.





This would be a great use for the parsley that's hanging in there in my garden. And I have quinoa on hand. By the way, I made the soup -- but I substituted black beans for the white. It was excellent. You are becoming my go-to place for dinner suggestions. Thanks.

Jodi - I'm glad the black beans worked out well. I tried that soup again using small white beans instead of cannellini beans - both were good.
