We were the fortunate recipients recently of a wonderful Greek Pasta Salad. Or should I say my friend's children did not care for this recipe at all so my friend lovingly thought of us, knowing our penchant for yummy weird foods. Anyway, it was gone in a flash! Since I haven't gotten the exact recipe from my friend yet, I found a Greek Orzo Salad that seemed pretty close. I didn't have quite enough artichoke hearts or fresh parsley on hand, so although this is VERY good with the substitutions and variations, it has not entered the realm of 'just right'...yet. I will definitely try this one again.
